The month of Ramadan is an important time in the Muslim calendar. Celebrate Eid al-Fitr, the ‘breaking of the fast’, at the end of the month of Ramadan, by cooking and sharing some vegetable samosas with the children at your setting. (The date changes each year, so check online to find out when it falls this year).
What you need
2 large potatoes
1 spring onion
1 tablespoon of frozen peas
1 tablespoon of mild curry paste
Vegetable oil/melted butter
What you do
Talk to children about Ramadan, the month whereby Muslims fast during the hours of daylight. Explain to children that you are going to make some tasty vegetable samosas to share together at Eid al-Fitr, which celebrates the end of Ramadan.
Pre-heat the oven to 200c.
Ask a small group of children to wash their hands, ready to cook.
Help children to peel, cook and chop the potatoes and carrots into 1cm chunks. Place all the vegetables in a bowl. (You can pre-cook the vegetables beforehand to save time.)
Let children use scissors to snip the spring onion into the mixture.
Stir in the peas and curry paste and mix it all together.
Lay out one sheet of filo pastry. Brush sparingly with oil or butter. Then, fold in half to create a long narrow strip.
Place a spoon of the vegetable mixture at the bottom corner of your pastry strip.
Help children to fold over from the corner and make a triangle shape.
Brush with more oil and keep folding the pasty over in triangles until the samosa is safely wrapped. Repeat until all the pastry and mixture is used up.
Bake on the tray for 15 - 20 minutes until your samosas are golden and crispy.
